    Cardio 5 days a week

    Do you think doing cardio 4 to 5 days a week with HIIT is a good way to lose fat and build some muscle?

    Fat loss is achieved by producing a calorie deficit in your diet.

    Muscle gain is achieved using proper resistance training. HIIT does not grow muscle (except maybe a tiny amount in novices)

    If your goals is to improve your cardiovascular conditioning then no, it probably won't do much to improve that because walking doesn't usually elevate your pulse much unless you are power walking.
