Weigh ribeye steak before or after

Do u count calories of fatty steak before or after cooking. My weight of the ribeye was 11.75 oz but after cooking it was 8.75. I'm assuming a lot of the fat melted into the pan which I poured in the sink. The calorie difference is about 300 which is a lot. Should I use the after cooking calories which is 300 calories less. I'm assuming if it's a lean cut of steak like sirloin u could use the raw weight since there is no fat to melt into the pan. Am I wrong

But how do account for all the fat that was obviously in the pan which I poured down the sink. That fat was the solid pre cooked weight.

Generally the extra fat is figured into the calorie amount of different cuts of meat. The problem with cooking things and then weighing is that water content changes dramatically with different cooking methods and water changes the final weight.
