    4 chicken breast
    1/4 tsp ground pepper
    2 tbsp olive oil
    1 clove garlic chopped
    1 lemon sliced
    1 tomato chopped
    1/4 C onion chopped
    1/4 C fresh parsley
    1 Tbsp fresh or 1 tsp dried oregano
    3/4 C low sodium chicken broth
    1 medium sweet green pepper cut in strips
    1 medium sweet yellow pepper cut in strips

    Sprinkle chicken with pepper
    Lightly coat a nonstick skillet with olive oil
    Cook chicken over medium heat til light brown (about 15 min) turning once reduce heat
    Sprinkle garlic,lemon,half the tomato,onion,parsley and oregano over chicken
    Add broth
    Cover and simmer for 15 min
    Add remaining tomato and sweet pepper,cover and continue to cook 7-10 min or til chicken is tender and cooked through

    Chicken Rub
    2 Tbsp Onion granules or 1 tbsp onion powder
    2 tbsp garlic granules or 1 tbsp garlic powder
    2 tbsp dried sage leaves,rubbed or whole
    2 tbsp dried thyme leaves
    2 tbsp dried parsley

    Combine ingredients blend well store in airtight containerMakes 2/3 C

    Cajun rub
    8 Tbsp paprika
    3 Tbsp cayenne
    6 tbsp ground black pepper
    2 tbsp garlic powder
    1 1/2 tbsp onion powder
    2 tbsp ground cumin
    4 tbsp dried oregano
    4 tbsp dried thyme
    Combine ingredients blend well Store in airtight container Makes 2 1/2 Cups
